During the years I worked in New York and lived in New Jersey , I threw a lot of holiday parties for my local friends and their kids. Every year, I made a big pot of hot chocolate - and every year, it disappeared faster. I started making bigger batches, but no matter the quantity, most guests bee-lined for the cocoa as soon as they came inside, and it disappeared lightning fast. My hot chocolate is silky, smooth, creamy, and immensely chocolatey. You can use any kind of cocoa powder and chocolate you like - but now’s the time to splurge on the “good stuff” if there ever was one. 

 

INGREDIENTS

630 g / 3 cups whole milk

118 g / ½ cup heavy cream

21 g / 3 tablespoons cocoa powder (I especially love to use black cocoa powder here)

24 g / 2 tablespoons granulated sugar

pinch fine sea salt

285 g / 10 ounces chopped milk chocolate

113 g / 4 ounces chopped white chocolate

whipped cream, as needed for serving (optional)

marshmallows, as needed for serving (homemade preferred, optional)

METHOD

1. In a medium pot, bring the milk and cream to a simmer over medium heat. While it heats, whisk the cocoa powder, sugar, and salt together in a small bowl.

2. When the milk simmers, whisk in the cocoa mixture until well combined. Add the milk and white chocolate and continue to heat over hot heat, whisking constantly, until the chocolate completely melts. If it doesn’t look smooth, whisk more vigorously to help it come together.

3. Ladle the finished cocoa into mugs and top with marshmallows or whipped cream (or both)! Serve immediately.
